Igår havde vi gæster til middag, istedet for en is-frugt dessert fik jeg lyst til bage cupcakes og prøve lustre dust stensling igen. Sidst var mine lustre dust stenslede cupcake blevet så flotte. Den her gang drillede både frostingen og lustre dusten pga varmen, ikke så samarbjeds villige. Min køkken var som sauna, gad vide om man kan få ejendommen til at sætte airkondition op i ens køkken. Mine gæster var dog meget glad for deres dessert og den smagte også super lækkert. Cupcakene er rose pistacie cupcake, smurt op med rose frosting og overtrukket med fondant. TROMME SLAG......Jeg har nu fundet en balance mellem rose duften/smagen og pistacie smagen. Tadda!! Så opskriften kommer her....altså lidt længer ned. Cupcakene er inspireret af marokkanske mandel kager.
Yesterday we had guests for dinner and instead of making a fruit -ice creme dessert I got a urge to make cupcakes and try stensling again with lustre dust. Because of the weather my kitchen was like almost a sauna. The forsitng and the lustre dust had theire own way, not so cooperative. Last time I did lustre dust stenciled cupcakes I didnt have these problems at all. How ever my guests enjoyed theire dessert. The cupcakes were rose pistacio cupcakes, so delicious, iced with rose frositng and covered with fondant. I think I have succeded in finding a blance between the rose fragnace/taste the pistacio taste. Taddah!! So here comes a super delicsh recepie.................. scroll down please. The cupcake are inspired from moroccean almond cakes.
Rose Pistacie Cupcakes/ Rose Pistacio Cupcakes
12 stk/ makes 12
65 gr pistacie nødder uden skal/ 65gr pistacio nuts without shells
100gr mel/ 100 gr all purpose flour
1tsk bagepulver/ 1 tsp baking powder
120gr smør, blødt (stue temperatur)/ 120gr butter, soft (room tp)
120gr sukker/ 120gr sugar
2 æg/ 2 eggs
30ml mælk/ 30ml milk
1½ tsk rosen vand/ 1½ tsp rose water
1- forvarm ovn 180 gr. Gør muffin formen klar.
1- preheat oven 180 degree C. Prepare the muffin pan.
2- mal pistaice nødderne i en kaffe blender til fin mel.
2- grind pistacio nuts in a coffe grinder, very finnely.
3- pisk smør og sukker sammen med en elpisker, til det er cremet og næsten hvidt.
4- tilsæt en æg ad gangen og pisk med mellem hastighed til æggene er godt blandet i.
5- si mel og vend forsigtig melet i ægge-smør blandingen med en stor ske. Mælk, rosen vand og pistaice mel vendes også forsigtig i.
3- whip butter and suger with el beater until creamy and fluffy, almost til it turn white.
4- add one egg at a time and whip with medium speed till eggs are well mixed in.
5-stift the flour and carefully mix with a large spoon. Add milk, rose water and the grinded pistacios and carefully mix.

6- fyld muffin formene op til 1cm af kanten. Bag i Ca 15-18 minutter. Mærk med en træpind om de er færdig. Hvis der sidder noget på pinden, så er cupcakene ikke færdig.
6- fill in the prepared muffin pan. I have filled up to 1cm of the edge of the paper cases. Bake them in the preheated oven 15-18 minutes or til they are done. I prick with a wooden gril stick to check them. The wooden stick should come out clean, then they are done.
Sådan så de ud. Køl dem på en rist.

Rose Frosting/ Rose frosting:
250gr flormelis,siet / 250 iceing sugar , sifted
80gr blødt smør/ 80gr soft butter
2 spsk mælk/ 2tbs milk
½ tsk lemon saft/ ½ tsp lime juice
½ tsk rosen vand/ ½ tsk rosen vand.
Sådan gør du: pisk smør med el pisker, kom den siet flor melis i og pisk til det er godt blandet. Kom mælk, lemon saft og rosenvand i lidt ad gangen og pisk til alt er godt blandet. Skrue op for hastigheden og pisk til cremen er luftig og let.
To make the rose frosting: beat the butter with your el beater, add the sifted iceing sugar and whip til every thing i well mixed. Add milk, lime juice and rose water and whip again on medium speed until every agian is mixed well. Then whip with high speed until the frosting is light and fluffy.
Smør cupcakene med frostingen, jeg prøvede at lav en lille kuppel med bagsiden af en ske.
Frost the cupcakes with frosting, I triede to make a little dome on them with the back side of a spoon .
