Zaffrani Butter chicken

Zaffrani Butter Chicken er min version af  butter chicken med saffran, den har nogle af de samme elementer som butter chicken, men jeg har undladt tomater og bukkehorns blade for  ikke overdøve safran smagen og for at fremhæve den blide nøde smag. Den lækker safran sauce er  fløjs blødt og cremet pga cashew nødderne. Jeg har brugt mandler og cashew nødder, man kan sagtens bruge kun cashewnødder. Retten kræver lidt forberedelse, bl.a marinaden af kylling og klargørelse af nødderne, herefter tager det ikke så langt tid.

Zaffrani Butter Chicken spises med kogt ris, roti eller naan. Mandel naan vil være rigtig lækker til. Jeg købte færdig lavet naan men hvis man gerne vil lave selv, er der opskriftt her : http://cupcakeluvs.blogspot.dk/2011/04/naan.html

Zaffrani Butter Chicken is my version of a butter chicken with saffron, it has some of the same elements as a regular butter chicken but I have left out the tomatoes and fengreek leafs (methi) to avoid overwhelming the saffron taste and the soft nutty flaovur. The  rich lush saffron sauce is smooth and silky because of the cashew nuts. I have used half amount almonds and half amount chashewnuts, you can use all cashewnuts if you like. The dish is easy only the preparation takes a bit time, you know marination of the chicken and blending the nuts.

To go with the Zaffrani Butter Chicken you have plain boiled naan or roti or naan. I bought made naan, but if you want to make at home almond naan will be very fitted and delicious with the Zaffrani Buttere Chicken. Recipe here :  http://cupcakeluvs.blogspot.dk/2011/04/naan.html

INGREDIENSER / INGREDIENTS

1 kg kylling kød uden ben/ 1 kg bone less chicken

marinaden / marination
3 spsk tyrkisk yoghurt / 3 tbs thick yoghurt
1 tsk salt / 1 tsp salt
1 tsk chili pulver / 1 tsp chili powder
½ tsk spidskommen pulver /½ tsp cumin powder
1 tsk koriander frø pulver / 1 tsp coriander seed powder
1/4 tsk garam masalah pulver / 1/4 tsp  garam masalah powder
½ tsk ingefær - hvidløg pasta / ½ tsp ginger - garlic paste
4 grøn chili, fint skåret / 4 green chili, finelly chopped

saucen / the sauce

150 ml fløde / 150 ml creme
½ tsk safran + lidt ekstra / ½ tsp saffron + ekstra

75 gr usaltet afskallede cashewnødder / 75 gr unsalted deshelled cashewnuts
75 gr afskallede mandler / 75 gr deskinned almonds
200 ml vand / 200 ml water

2 mellem store løg, fint pureret / 2 medium size onion, finelly pureed
2 spsk olie / 2 tbs oil
50 gr + 25 gr smør  / 50 gr + 25 gr butter

1: Skær kylling kødet i store terninger. 2: Bland alle ingredienser til marinaden og marinere kylling kødet i det minimum ½ time. 

1: Cut the chicken meat in large dices. 2: mix all the ingrediens for the marination and marinate the chicken with mixure minimum ½ hour.

3: knus safran trådene og kom dem i fløden i en lille kop. Dæk kop med en tallerken og lad fløden stå ca 15 minutter.

3: crush the saffron strands and mix them with the creme in a little cup. Cover the cup with a plate and leave for 15 minuts.

4: Blend nødderne sammen med vandet i en blender eller milkshake maskine.

4: Blend the nuts with the water in blender or milkshaker into a very smoot paste.

5: Smelt 50 gr smør sammen med olien i en gryde. 6: Kom løg puren i og sauter på mellem varme indtil purén har fået lidt farve. 

5: Melt 50 gr of the butter with oil in a pot. 6: Add the onion puree and sauté until the puree get cooked and gets a little colour.

7: tilsæt kylling kødet med marinaden i gryden og sauter kylling indtil den bliver hvid i farven, ca 7-10 minutter. Husk at rør rundt. 

7: Add the chicken pieces with all marination in the pot and sauté the chicken for about 7-10 minuts until the chicken becomes white.

8: Tilsæt nøde blanding og give det hele en opkog, nogle få minutter så den rå smag af nødderne forsvinder. Der skal forsigtig røres rundt under opkogning.

8: Add the nut mixture and give it a few boils, some few minus so the rwaness of the nuts disappears.  Stir time to time carefully.

 9: Bland fløden med safran i gryden giv den en opkog og skrue ned for varmen og lad saucen blev tyk og kylling mør. Det kommer også an på hvor tyk I vil have saucen. Jeg lod den simrer ca 8 minutter, mens jeg engang imellem rørte forsigtig i den.

9: Mix the creme with saffron in the pot and boil once and decrease the heat. Let the whole thing simmer for about 8 minuts, until the sauce thickens and the chicken is cook trough. It depends on how thick you want the sauce. Remember to stir softly time to time.

10: Smelt de sidste 25 gr smør på en lille pande og bland det i gryden. 

10: Melt the last 25 gr of butter on a little pan and add it the pot with chicken.

Jeg pyntede med spiseligt guldblade, men Zaffrani Butter Chicken behøver egentligt ikke pynt, den er smuk som den er.  God fornøjelse og god appetit!!

En af hoved emnerne i samtalerne angående vores tøse (min datters og min tur ) tur til London var afternoon tea, hvor og hvor mange antal. Vi elsker det traditionel engelske konceptet med at få serveret dejlige te med luksuriøst sødt og lækkert saltet på smukke kage fade. 
 Forstil jer vores glæde da vi fandt ud at der var talrige afternoon teas  i London, Vi ville have dem alle,  den sjove , skøre afternoon tea, den elegante, dekadente og luksuriøse. ..... der var så meget at vælge imellem. Vi blev realistisk og tænkte at vi måtte nøjes med 2 - 3, minimum 2 afternoon teas, da det var vores første tur til London og vil også ville have andre foodie oplevelser.  Ok før I går vidrer,  lav en god kop te og sæt jer godt til rette og nyd. 

One of the main issues in planing our trip to London (my daughter and mine)  was afternoon tea , the venues and how many.  We love the idea of beeing served with fine tea, scrumptious savory and lush sweets in beautiful venues, we love the traditional english afternoon tea. In Copenhagen there are not so many venues for afternoon tea.

A big thansk to one of my foodie friends for telling me about a lovly afternoon tea page all about afternon tea venues. (see afternoon tea nr 2)  Imagine our joy finding out there were countless afternoon tea venues in London. We wanted them all !! the fun , quircky one, the elegant lush one, the decadent and indulgent one. Oh there was so much to choose from,  we became realistic and narrowed down to 2-3,  minimum 2 afternoon teas, since it was our first wisit to London and we were only going to stay there for 7 days.  Before you go on..... make you a nice cup tea, be seated and enjoy.

Ja, I ser rigtig vores første afternoon tea var på bus!! Den her afternoon tea var den første jeg fandt. Min datter bookede og bestilte bord allerede inden vi have bookede vores rejse.  Jeg anbefaler man bestiller bord i meget god tid, der er rift om pladserne. 

Yes, you are seeing correct our first afternoon tea was on bus!! This afternoon tea was the first one I found. My daughter booked a table for us weeks ahead, even before we had booked our trip.

Vi havde set så meget frem til denne bus tur. Det var en herligt tur, sikken en sjov måde køre rundt i byen på i en gamle Routemaster bus mens man nyder alle de dejlige lækkerier og godt te.  BB Afternoon Tea Bus Tour er lidt dyrt men alle pengene værd synes jeg.

Det er ikke en guided tur, noget bliver udpeget.....  så man kan nyde sin te i fred.

Alle bord var dækket inden man steg på, man blev vist hen til sit bord og personalet tilbyd alle at tage billedet for en.Vores betjening var meget sød og underholdende. Menuen var fransk  masser af lækker kager. Mine favoritter var de mini lemon tærte og mini bær tærte. 

Der tilbydes halal og vegetarisk menu også. Det bestiller man når man booker bord. Vi havde booket halal menu først, men siden lavede vi det om til vegetarisk uden problemer.

All the tables were set before you entered the bus, you were showen to your table and the staff were so kind to offer taking photo of you. Our server was very kind and entertaining. 
The menu was french yummy cakes and pastries, my favorites were the mini lemon tart and the mini berry tart.

Halal and vegetarian menu is offered, you make a order when you bookWe had booked for a halal menu, later on we changed for a vegetarian with no problems.

Foruden kager til afternoon tea hør der også det "saltet" savory til.  Mini quich og lækker sandwiches. Til dem den undrer sig der var ikke noget der væltet eller sejlede rundt når bussen kørte.  Til sidst fik vi søde lyserøde doggie bags til at tage rester med hjem.

For the savory there was mini quich, belinis and sandwiches all so good and tasty.
And all you wondering nothing tipped or fell , while the bus drove around.  And we also got cute pink doggie bags to take left overs with us. 


2.  Sandersons Mad Hatter Afternoon Tea

Afternoon tea nr 2, en af højdepunkterene på vores London tur,  var lige noget for os skøre eventyr mor og datter fans. Jeg var så glad, da jeg fandt og bookede Sandersons Hotels Mad Hatter Tea gennem Afternoon Tea.com som en overraskelse og en forsinket fødselsdagsgave for min voksne datter.  
Stor tak til Afternoon Tea. com hjalp med at finde ud at der  godt kunne lave en vegetarisk menu.  

Afternoon tea nr 2, one of our favorites on our London trip,  just the right thing for us crazy fairy tale and adventure mother and daughter fans.  I was so happy to find and book this venue  trough Afternoon Tea.com as a surprise and a late birthday gift for my adult daughter.

No halal or vegetarian menu was offered while booking but a big thanks to Afternoon Tea, for helping me with finding out that Sandersons could do a vegetarien menu for us.

Vi elskede alt ved denne afternoon tea, alt fra de gennemførte desserter til bord dækning og porcelænet. Menuen gemte sig i en bog og der var gåder til os på bordet..... Da vi ankom blev vi tilbudt bord uden for og en bord inden for da det var lidt kold, vi valgte at sidde uden for da det så hyggeligere, sener flyttede vi til et bord lidt under nogle varmer uden problemer. 


We loved everything about this afternoon tea,  every thing from the big array of desserts to the table setting and china. The menue was hidding in a book and there were ridlles on tablele for us........................ When we arrived we were offered a table inside and a table out side because it was cold, we choose to sit out side because it looked cosier.  We moved to another table soon under heaters with out problems.

Vi elskede merengs gulerødderne, de smagte så godt var gennemførte og passede så meget i tema.
Selv om vi havde bestilt en vegetabilsk menu, havde der sneget sig nogle hjemlavede ikke vegetabilske marshmellow svampe ind på kage fadet. Vi fik tilbudt nogle lækker chokolade trøffler istedet. Vores vært/tjener forsikret os at mushroom var de eneste de lavede med gelatine. Jeg fik desværre ikke spurgt ikke hvilken slags geletine de var lavet af. Jeg havde ved bestilling af bordet angivet at vi godt kunne spise fiske eller vegetabilsk geletine. Jeg anbefaler at når man booker bord man laver en forspøgelse til hotellet om hvad indhold af deres kager er og hvad de kan tilbyde istedet. Idag kan mange desserter laves på fiske og plante gelatine, f. eks agar agar.

Bortset fra det var alt upåklageligt, betjening var sød og opmærksom og maden var ubegrænset, så man kunne be om mere og mere. Herfra anbefales at komme på tom mave :). Te udvalget var stor og lækkert,  jeg fik assam og min datter chokolade mint te.  scroll ned ad for mere billeder

We loved the carrot miringues, they were so delicious, well made and so in the theame.

Even we had booked for a vegetarian menue non vegetarian marshmellow had sneaked on our beautiful 3 tired cake stand. We were brought some delicious choclate truffles instead. Our server assured us that the homemade mushrooms were the only thing they had used geletine in our servering, thats why mabey we were not offered the jelly. I didnt get to ask what kind of geletine it was. Booking the table I had listed that we could have desserts with plant and fish geletine.  I reccomend booking the table you make a kindelly request to the hotel about what theire cakes contain and what they can offer you instead. Today lot of dessert kan made with fish geletine or agar agar.

Except that everything was  excellent,  the staff were kind and attentive. We througly enjoyed "tumbling down the hole". The food was delicious and plentyful....... and unlimted. The tea collection also was plentyfull and fine. I has assam with milk and my daughter had a lovly chocolate  and mint tea.  scroll down for more pictures

3. Afternoon Tea at Ladureé

Sidst men ikke mindst vores afternoon tea nr 3.  i  Laduree i Coventgarden, Laduree en fransk bageri berømt for deres macrons.  Da den restaurant vi skulle spise frokost på vores sidste dag London var lukket valgte vi at drikke afternooon tea på Laduree da vi alligevel skulle derinde og købe makrons. Det var en rigtig hyggeligt te med briocher og millefues, macrons.

Last but not least afternoon tea nr 3 in Laduree in Covengarden. You may know Laduree is a french bakery famous for its macrons.  On our last day buying macrons from Laduree, we choose to have afternoon tea also since the restaurant we were having lunch in was closed.  What a lovly tea with briochs, macrons and pastires.

Vi kunne  godt lige deres hyggelig indretning, især den macrons pyramide.  Man sad tæt på hinanden, men jeg synes ikke at det gjorde noget. 


We loved theire interior and decorations, spcially this marons pyramide. It was cozy, the table were quite close to each other, but we did´nt mind.

..........  jeg elsker de her flotte pastel farvede kopper og tallerkener.  

Vores betjener var rigtig sød,  effektiv og hun dobbelt chekede alle ingredienser. Vi fik at vide at de kun bruger fiske gelatine i kager og macrons i Laduree i London.

............. and I so loved the china , loved the pastel colours.

Our server was so sweet and affentive and she dobbled checked by her slef the ingredients for us. We found out that Laduree in London only uses fish geletine in thiere pastries, cakes and macrons.

Alt smagte så lækkert.  Jeg fik en pistacie brioch, lækker og luftige. Man vælger to briocher, to macrons, to finger sandwich og to kager  Man kan sig at sandwichene var almindeligt men kagerne var en helt anden sag...... himmelsk er nok det rigtige ord at beskrive kagerne med. Der er ikke nogen mini kager her, så egentligt kan man nøjes med at bestille 1 sæt afternoon tea til deling mellem 2 personer. Macrons var lækker og friske, min favorit var den med salted karamel ganache. Det aller aller bedste var Ispahan kagen, en marengs med hindebær og lychee, det er den lyserøde kage I ser på billedet. Den smagte himmelsk og eksotisk.  Den er vores absolutte favorit på hele vores London tur. 
Der var også en god udvalg af te, jeg fik c.eylon med mælk. Min datter drak dog kaffe denne gang

Everything was so good. I had a pistacio briochs,  2 delicious and fluffy. You choose 2 brioch, 2 macrons, 2 finger sandwiches and 2 pastries.  The sandwich are very simpel, but the sweets are to die for. There are no mini cakes here, so you can order  1 set of afternoon to share for to persons.  Okey back to the cakes..  the macrons were delicious and fresh, min favorite was the one with the salted caramel ganache.  The absolutte favorite of not only that day but of our whole trip was the Ispahan pastry, a meringue with lychee and raspberry. It is the pink cake to are seeing on the pic. It was devine and exotic. The tea collection was also vey fine, I enjoyed Ceylon with milk, but my daughter  had coffe this time.

Tomat chutney marineret laks / Tomato chutney marinated salmon

Det taget lidt længere tid end antaget at få skrevet min post om London foodie oplevelser færdigt, men mens vi venter kan vi nyde denne lækker tomat chutney marineret laks. 

Let og lækkert, laks med en lidt røget tomat smag fra tomat chutney,  en lille anelse sødme og en let ingefær og chili kick, mums.

Jeg fik købt nogle lækker chutney´er fra London på vej hjem,  bl.a en spicy tomat chutney som jeg har brugt til at marinere lakse filleterne med. Husk at bruge en spicy chutney ellers bliver laksen for sød.



It it taking more time then ancipated writing my post about foodie experiences in London, while waiting we can enjoy this delicious tomato chutney marinated salmon.

Easy and delicious, flacky salmon with a taste of smoked tomatoes from the tomato chutney, hint of sweetness and a little kick of ginger and chili, yum.

On the way back home I got to buy some yummy chutneys, among them a spicy chunkey tomato chutney wich I have used to marinate the salmon pieces with. Remember to use a spicy tomato chutney or the salmon wil become too sweet.

for 2 personer / for 2 persons

4 laks fileter a ca 120- 150 gr  / 4 salmon pices or filets 120 - 150 gr each

2 spsk spicy tomat chutney / 2 tbs of any spicy tomato chutney
1 tsk rød chili pulver / 1 tsp red chili 
1 tsk salt / 1 tsp salt
1-2 stærk grøn chili, fint skåret /  1-2 hot green chili, finelly chopped
1 tsk vegetabilsk olie / 1 tsp  vegetable oil
½ tsk frisk revet ingefær / ½ tsp fresh grated ginger
lidt frisk koriander blade / some fresh coriander leafs
 2 ark bage papir / 2 sheets of baking paper

Tilbehør/side dish

 6 friske tomater ( evt blomme tomater med gren) / fresh tomato, plum with stem
1 tsk olie / some oil

krydderier  stegte  kartoffler, se linket / spice roasted potatoes, click the link for recipe

 Forvarm ovn 200 grader. Bland tomat chutney sammen med olie, salt,  rød chili, friske hakket grøn chili og ingefær i en skål. Mairnere laks filleter i denne marinade.  Læg to laks filleter ved siden af hindanden på en bagepair ark,   rest marinaden i skålen skal fordeles oven på de fire lakse stykker.  Drys med groft hakket koriander blade.

Prehaet the oven 200 degree C. Mix the tomato chutney with all the spices, ginger and fresh chili and oil in a bowl. Marinate the salmon pieces.  Place to salmon pieces side by side on a baking paper sheet, do the same with the 2 other pieces on the other sheet.  Scatter the left over marination over the salmon pices and scatter some chopped coriander leafs.

 Lav to pakker som vist på biledet, læg dem på bageplade og steg lakse filleterne ca 8 minutter i ovn.  De friske tomater børstet lidt med olie og lægges ved siden af.  


Make 2 parcels as shown in the picture, place them on a baking sheet.  Brush the fresh tomaotes with a little oil and place them also on the baking sheet. Cook for 8 minuts.

Nyd varm, pas på den varme luft når i åbner pakkerne.  Vi fik lidt yoghurt mynte chutney til vores laks og  salat ved siden, foruden de bagte tomater og krydder kartoflerne.

London 1 : Cake International Show 2015 London

Hej alle sammen,  nyder i jeres Påske ferie? Vi er  næsten lige kommet hjem fra en fantastisk og oplevelses rig ferie i London. 7 dage og der var så meget der skulle ses, oplevelses og nydes: attraktioner, mad, afternoon teas og selve byen bl.a. Det var en tøse tur min datter og jeg havde talt om næsten i 3 år. Min datter havde aldrig været i London og jeg har været i London for maaaange år siden i min barndom (i 9 klasse) og siden en lidt mislykket studie tur med arbejdet ( lang historie). Det føltes som første gang besøg for mig også da jeg ikke kendte ret meget til London.  Sikken en dejlige oplevelse det var, alhamdolillah. Jeg vil fortæller jer om vores afternoon teas og mad oplevelser sener. Idag vil jeg vise jer billeder af nogle de fantastiske flotte kager

Vi havde planlagt vores ferie sådan at det passede med Cake International.  Jeg var til den der var her i danmark sidste år, men jeg har altid haft lyst til at at se en stor international cake show i udlandet.  Alle billeder er taget af min dejlige fotograf (min datter)

Hello everybody are you enjoying your hollidays ? We almost just returned from wonderful vacation in London. 7 days and so much to see, experiance and enjoy : afternoon teas, attractions, food and London it slef. This was a girls trip my daughter and I had talked about in almost 3 years. My daughter had never been to England before and I wisited London in my childhood many many years ago and later a very short trip with my work,  so I did´nt know England or London either. What a wonderful trip it was,  alhamdolillah. I will tell you about our foodie experiances and afternoon teas later. Today I will show you some beautiful cakes.

We arranged our trip so that I also could see the Cake International Show in London.  I was so exited about the cake show, I had been to one here in Copenhagen last year but  always also  wanted to see one international cake show abroad.  All pictures are take by my lovly photopgher (my daughter)





Vi tog til Cake show same dag som vi ankom til London,  vi havde planlagt at sejle på Thames floden ned til Greenwich, hvor man så kunne tage cable car til London Excel. Det viste sig til at være en rigtig god ide, vi  fik en "live" fornemmelse af byen og så næsten alle de store attraktioner, de flotte brorer fra floden. Vores tur  med Thames Klippers startede lige under The London Eye og fortsatte til O2 i Greenwich.  

We arrived to London early morning and aimed for the cake show rigth away. We had planned to go to Greenwich by boat and then by cable cars to the London execel. That turned out to be such a great idea, because we got a "live feeling" of the city and saw almost every big landmarks including all the beautiful bridges sailing down the Thames . Our trip with the Thames Klippers began rigth under the London Eye to 02 in Greenwich.

Cake show var overvældende stort og flot, så meget inspiration og så meget talent samlet under et tag.  Jeg elskede at gå rundt og besøge alle udstiller med nyt fra kage dekorations verdenen.  De absolutte højde punkterne for mig var at se alle de flotte overdådig kager i konkurrencerne og at møde denne meget talentfulde herrer, den absolutte mester af Royal Icing :  Eddie Spence.


The Cake show was overwhelming big and beautiful. so much inpiration and talent under one roof. I love all the exhibitors with new trends in the cake decoration world. fro me the absolut top was to see all the beautiful cakes in the competitions and to meet this very talented gentleman, the master of Royal Icing : Eddie Spence.

Sikken en hovedbrud det må have været for dommerne at vælge mellem alle de flotte kager. Hver eneste kage var flot og lavet med kærlighed.  Kager neden under er nogle af mine favorite, jeg ved desværre ikke hvis kager det er. How difficult it must have been to choose winners from this lot talent for the judges.  every cake was so beautiful and made with love. The fallowing cakes are some of my favorites.
