Let og lækkert, laks med en lidt røget tomat smag fra tomat chutney, en lille anelse sødme og en let ingefær og chili kick, mums.
Jeg fik købt nogle lækker chutney´er fra London på vej hjem, bl.a en spicy tomat chutney som jeg har brugt til at marinere lakse filleterne med. Husk at bruge en spicy chutney ellers bliver laksen for sød.
It it taking more time then ancipated writing my post about foodie experiences in London, while waiting we can enjoy this delicious tomato chutney marinated salmon.
Easy and delicious, flacky salmon with a taste of smoked tomatoes from the tomato chutney, hint of sweetness and a little kick of ginger and chili, yum.
On the way back home I got to buy some yummy chutneys, among them a spicy chunkey tomato chutney wich I have used to marinate the salmon pieces with. Remember to use a spicy tomato chutney or the salmon wil become too sweet.
for 2 personer / for 2 persons
4 laks fileter a ca 120- 150 gr / 4 salmon pices or filets 120 - 150 gr each
2 spsk spicy tomat chutney / 2 tbs of any spicy tomato chutney
1 tsk rød chili pulver / 1 tsp red chili
1 tsk salt / 1 tsp salt
1-2 stærk grøn chili, fint skåret / 1-2 hot green chili, finelly chopped
1 tsk vegetabilsk olie / 1 tsp vegetable oil
½ tsk frisk revet ingefær / ½ tsp fresh grated ginger
lidt frisk koriander blade / some fresh coriander leafs
2 ark bage papir / 2 sheets of baking paper
Tilbehør/side dish
6 friske tomater ( evt blomme tomater med gren) / fresh tomato, plum with stem
1 tsk olie / some oil
krydderier stegte kartoffler, se linket / spice roasted potatoes, click the link for recipe
Forvarm ovn 200 grader. Bland tomat chutney sammen med olie, salt, rød chili, friske hakket grøn chili og ingefær i en skål. Mairnere laks filleter i denne marinade. Læg to laks filleter ved siden af hindanden på en bagepair ark, rest marinaden i skålen skal fordeles oven på de fire lakse stykker. Drys med groft hakket koriander blade.
Prehaet the oven 200 degree C. Mix the tomato chutney with all the spices, ginger and fresh chili and oil in a bowl. Marinate the salmon pieces. Place to salmon pieces side by side on a baking paper sheet, do the same with the 2 other pieces on the other sheet. Scatter the left over marination over the salmon pices and scatter some chopped coriander leafs.
Lav to pakker som vist på biledet, læg dem på bageplade og steg lakse filleterne ca 8 minutter i ovn. De friske tomater børstet lidt med olie og lægges ved siden af.
Make 2 parcels as shown in the picture, place them on a baking sheet. Brush the fresh tomaotes with a little oil and place them also on the baking sheet. Cook for 8 minuts.
Enjoy hot, but becareful of the hot air opening the parcels. We had a little yoghurt mint chutney and salad on the side to go with beside the baked tomatoes and spiced potatoes.
