Double Chocolate Orange Cheesecake / Dobbelt Chokolade Appelsin Cheesecake

Denne gang blev en cheesecake min bidrag til vores Eid dessert bord. Det var lidt en eksperiment , idet jeg omsatte mango cheesecake opskriften til denne chokolade lækkerbisken af en cheesecake. Det blev en superlækker fyldig kage. Næste gang vil jeg prøve at lave den med lidt mindre sukker. 


 This decadent dobble chocolate orange cheesecake was my contribution for our Eid dessert table. It was a experiment as I used mango cheesecake recipe . It became a delicious rich creamy chocolate cake, so I think my experiment was a succes, though next time I will use less sugar, I dont think the cake needs that amount of sugar beacuse of the  chocolate.

Opskrift / Recipe


bund/ crust

300 gr kiks /   300 gr crackers
80 smør / 80 gr butter
30 gr sukker / 30 gr sugar

fyld / filling

280 gr appelsin chokolade / 280 gr orange chocolate
200 gr hasselnød chokolade creme / 200 gr hazzaelnut chocolate spread
500 gr flødeost / 500 gr cream cheese
6 små æg / 6 small eggs
100 gr sukker / 100 gr sugar
frisk revet skal af 2 store økologiske appelsiner / zest of 2 big organic oranges oranges
60 ml appelsin saft / 60 ml orange juice

topping/ topping

piskefløde / whipping cream
1-2 spsk kakao pulver / 1-2 coco powder
kandiseret appelsiner skiver / candied orange slices

kandiseret appelsin skiver /candies orange slices
1 økologisk appelsin/ 1 oragnic orange
2 dl vand / 2 dl water
1 dl sukker / 1 dl sugar


Skær appelsinet i tynde skiver, bring vand og sukker i kog i en lille gryde. Sukker skal være opløst. Kom applesin skiverne i , efter 2 minutter skrue ned for varmen . Småkog appelsin skiverne til sirup er tyk , husk at vende 
(ikke omrør) appelsin skiver nogle gange.
Tag appelsin skiveren ud , læg til afkøling.   Gem applesin sirup til et andet dessert.

Cut the orange into thin slices. Bring the water and sugar to a boil in small pot.  Dissolve all sugar before adding oranges. Add the orange slices and after 2 minuts  decrease the heat. Cook the oranges until the sirup gets thick. Remember to turn the orange slices  3 - 4 times. dont stirr, just turn them over. Take the orange slices out to cool, place them on baking paper. You wil have a deilcious left over sirup too wich you can keep for another dessert.




1. til bunden,  Forvarm ovn 180 grader.  Gør en 28 cm springform klar, smøres med smør.  Smelt smør. Kiksene knuses i blender sammen med sukker og det smeltet smør. Press kikse blandingen ned i spring form. Bages 10 minutter.  Efter bagning stil til afkøling.

 2. til fyldet, smelt appelsin chokolade over vand bad. Afkøl let inden brug. 

 Det andet chokolade, nødde cremen skal være blød, pisk den let for sig selv.

Pisk flødeost og sukker sammen, til det er godt blandet, tilsæt en æg ad gangen. Tilsæt appelsin saft og appelsin skal og bland med gaffel. 

Vend det smeltet chokolade i, og til sidst vend nødde cremen i. 

Kom fyldet over i springformen over den forbagte bund.

Cheesecaken bages i vand bad, 150 grader forvarmet  ovn i ca 40 minutter.  Kagen skal være fast på siderne og midten blød.  

Afkøl cheesecaken nogle timer i kølskabet, gerne natten over. 

3.  til topping, pisk piskfløde til skum, vend kakao pulver i . Top cheesecake med flødeskummet og pynt med de kandiseret appelsin skiver.

English: 

1. for the crust, preheat the oven 180 degree celcious. Prepare a baking pan  with butter. Crumb the crackers with melted butter and sugar in a blender. Press the mixture in bottom of the baking pan. Bake for 10 minuts.

2. for the filling, melt the orange chocolate over waterbath. 

The other chocolate, choclate nut spread should be soft, you can whip it a bit before using. 

Beat cremecheese and sugar, add one egg at a time a , and beat lightly until every is well incorparated. Mix in orange jucie and zest with a fork.

Mix in the melted orange chocolate and finnely mix in the nut chocolate spread.

Pour the mixture in the baking pan with crust. Wrap the baking pan in silver foil.

Bake the cheese cake in waterbath in 150 degree preheated oven for 40 minuts, or until the cake is firm on the side and the middle stil is a bit soft.

Cool the cake in fridge for some hours or best is overnight.

3. for the topping, whip the cream and top the cake with it.  Decorate with candied oranges.

"Sheer Khorma"

Idag skal I  smage meethi sawaiyaan dvs sødt vermicelli. Sheer khorma, som desserten hedder,  betyder dadler i mælk. Desserten laves ved  riste vermicelli  i  ghee og siden tilsætte mælk ,sukker og tørrede dadler. Der er en simpel men lækkert dessert som  laves aftenen før Eid og spises til morgenmand på Eid. 

Den her opskrift har jeg fra min mor. Hun laver sin søde vermicelli uden dadler, så derfor kan man ikke helt kalde Sheer Khorma, da khorma betyder dadler. Hun koger mælk op med sukker og kardemomme, nogle gange tilsætter hun også fløde for at gør desserten lidt mere cremede. 

Hvis man gerne vil bruge dadler, so fjern stenen fra 4-5 tørrede dadler . Hak dem groft og tilsæt dem i mælken inden fløde tilsættes.

Today you will be tasting meethi sawaiyaan, meaning sweet vermicelli . This scrumptious dessert actual name is sheer Khorma, meaning milk dates. It is made by frying the vermcelli in ghee, then adding sugar milk and dates, This simpel but delicious dessert is a traditional Eid dessert, In Pakistan is made the evening before Eid and servered for breakfast.

The recipe in use is my mothers and can not really be called Sheer Khorma as she dont use dates, as khorma means dates. Now a days she uses pre fryed vermicelli and some time she adds cream to the milk to make a creamy dessert.

If you want to make the dish with dates, remove pitt form 4- 5  dried dates,  chop them coarsly and add them to the milk just before adding cream.

Indgredienser / Ingredients

ca 8 personer/ makes 8 portions

100 gr ristet varmecelli / 100 gr roasted varmecelli / bhuni sawayiaan
1,1 liter mælk / 1,1 liter milk
250  ml fløde / 250 ml creme
5-6 spsk sukker /  5 - 6 sugar
4 kardemomme /  4  green cardemomme / illachi
smuttede mandler / blanched almonds / badaams

Kog mælk, sukker og knust kardemomme frø i en gryde. Knæk vermicelli (så de er ca 4-5 lange). tilsæt vermicelli til den kogende mælk, Skrue ned for varmen og kog for  ca 5 minutter mere under omrøring.

Grind the cardemome/illachi seeds. Boil milk with sugar and cardemomme seed. break the vermicelli in to small pieces , something like 4 cm long and add to the boiling milk. Boil for few minuts then decrease the heat and cook for few minuts more while stirring time to time.

Når det begynder at blive lidt tyk, tilsæt fløde. Kog det  5 minutter mere på lav varme. Hæld desserten over i portions glas og still på køl. Inden servering garnere med mandler.

When the dessert has thicken, add cream . Cook the vermicelli for 5 minuts more. Pour the Sheer Khorma into serving dishes and cool, Before severing garnsih with chopped almonds.
