Kale channe chaat med/uden golgappey

Ramadan Mubarik. Jeg håber det bliver en særdeles velsignet ramadan for alle.

Chaat med sorte kikærter er en anden lækker variation af den almindelig chaat med de gule kikærter. Spis den alene som en sund snack eller fyld golgappey med den.  Golgappey en pakistansk street food. Det var det en vores 3 favorite street food når vi besøgte Pakistan. 
For dem der ikke ved, hvad er golgappa er, så er det en crispy hul skal som fyldes op med katta pani oversat syrlig vand eller fyldes op forskellige chaat og tamarind chutney. Det spises i et bid, så alle smagene popper i munden i den samme bid. 
I min barndom var golgappa kun solgt med denne iskolde syrligt vand som kunne indholde få kikærter. Det er først i de sener år at det er blevet mere almindeligt at golgappey kan fyldes op med andet forskellige fyld. Nogle steder kaldes golgappa også for pani puri. For mig vil de altid hedde golgappey

Man kan købe golgappey i de pakistanske mad forretninger her i København. Der er forskellige pakker, nogle kommer med tilbehør f.eks mix til den syrlig vand. 

TIP:
Kala namak oversat betyder sort salt, salten er en anelse syrligt end den almindelig salt. Kala namak er ikke sort farvet men lidt lyserøde farve og i det pakistanske køkken bruges det bl.a i chaat, chutney og chaat masala. Herhjemme kan det købes i pakistanske forretninger men sælges også i helse forretning under navnet Black Salt. 

Katta pani, som skrevet tidligere, kommer nogle af pakkerne med en mix til denne syrligt vand. Det er ikke svært at lave derhjemme hvis man har ingredienserne. Jeg kommer tamarind i, når jeg selv skal lave katta pani. På billderne har jeg lavet fra den mix der findes i pakkerne.

Bundi kan undlades. Man købe det færdiglavet. Normal bløder man det op i vand, men jeg ville gerne have lidt knas i Chaaten.

Kale chaane chaat

240 gr kogte økologiske kikærter
5 -6 kartofler, skæres i små tern eller skiver
2 stor rødløg, fin hakket
2 stor tomater, skåret i små tern eller små skiver.
3 grønne chili, hakket ( kan undlades)
2 spsk bundi, (kan købes i forretninger) se tip
3 spsk hakket mynte
1 tsk salt
3 tsk chaat masala, se tip
1 tsk spidskommen frø
2 spsk granatæblekerner


Bland alting til kale channe chaat i en skål, lad det stå ca 

15 minutter.

Katta pani
Kogt 250 ml vand blandes op med 2 spsk tamarind pasta og 1½ tsk kala namak. Afkøles i køleskabet, iskoldt smager bedst. 


Tilbehør 
Færdig lavet golgappey 
Iskoldt katta pani 
lidt natural yoghurt
Tamarind chutney/sauce
evt frisk hakket koriander og mynte


Med Golgappey: Tryk forsigtig en hul med tommelfingeren i golgappey og fyld dem op med kale chaane chaat, top med lidt yoghurt og tamarind chutney og friske urter. Spises straks for at golgappey skal ikke skal blive blød. Servere katta pani ved siden. Prøve også golgappey kun med katta pani. Her serveres golgappey i dyb potions skåle med katta pani vedsiden, tryk hul med tommelefingeren og fyld op med katta pani, spises strak i et bid.

Kale channe chaat uden golgappey: chaaten fordeles i portions skåle/glas krukker, top med lidt yoghurt, lidt tamarind chutney, friske urter og drys lidt chaat masala på.

Chaat made with black chickpeas is another delectable version of the aloo channe chaat. Enjoy it alone with topping as a healthy sanck, as a salad or use it as stuffing for golgappey. Golgappey is a pakistani street food or snack, wisiting Pakistan i our childhood this was one of our 3 favorite streets food.
For those who dont know, golgappa is a crispy hallow sphere wich is filled with katta pani (tangy spiced water) or stuffed with different kind of chaats. You eat it one bite, so all the tastes pops in the mouth in one bite. Some call them pani puri, for me they wil always be golgappey :)

Here in Copenhagen you can buy golgappey in the pakistani grocery stores. Some packages contain different condements like mixture for katta pani.

Here are few tips about the condiments used.

Katta pani is this tangy icecold water made with kala namak. This time I have made it with the mixture from the golgappey package, but it is easly made at home too if you have all the indgredients. My recipe is below.

Kala namak translated means black salt, it is not black but more of pinkish colour, it orgins from Himalay and has a more tangy taste, some say it tastes like eggs. In pakistani cuisine kala namak is used for chaats and chutneys. Here in Copenhagen you can not only buy it the pakistani shops but also in health shops. 

Boondi can aslo be bought, before using it is soaked in water. But I have used it for as crunch in my chaat, so I have not softened it this time. Boondi is optional.

Kale channe chaat 

240 gr boiled organic balck chickpeas
5 - 6 boiled medium sized potatoes , cut in small pieces
2 medium sized red onions, chopped finely
2 large tomatoes, chopped
2 tbs bundi, optional see tip
3 green chili, fien chopped, optional
3 tbs fresh chopped mint leafs
1 tsp salt
3 tsp chaat masala, see tip
1 tsp cumin seeds
2 tbs pommegranate seed

Mix everything in a bowl and leave it for 15 minuts. 

Kaata pani
Mix 250 ml water with 2 tbs tamarind paste and 1½ tsp kala namak. Cool and refrigerate. Ice cool taste best. 

Condiments
Golgappey
Ice cool Katta pani
plain yogurt
tamarind chutney
little fresh mint or coriander

With Golgappey: with you thumb lightly press a hole in the golgappa and fill in kale channe chaat. Top with little yogurt, tamarind sauce and fresh herbs. Enjoy them in one bite. Serve the katta panni beside. Do try golgappey with katta pani only also, after pressing a hole in the golgappa fill it with katti pani and enjoy in one bite.

Kale channe chaat with out golgappey. Distribute kale channe chaat in portion bowl or jars, top with yogurt, tamarind sauce, fresh herbs and sprinkle with chaat masala
