Hos os er vi stædigvæk i Tea Party mode. Og man kan vel ikke have en te party uden cupcakes. Så værsågod her er : Appelsin - Mandel - Birkes frø Cupcakes med appelsin frosting. De er så lækker, frisk og svampet. Min gæster var ihvertfald vilde med dem. Jeg brugte opskriften fra Citron og Birkes Cupcakes http://cupcakeluvs.blogspot.dk/2013/02/citron-birkes-cupcakes-lemon-poppy-seed.html,
jeg erstattede citron med appelsin og tilføjede mandel mel. Yum Yum
ENGLISH:
At our place we are still in Tea Party mode. You cant have a tea party with out cupcakes. So here enjoy : Orange - Almond - Poppy seed. They were so delicious , fresh and moist. My guest loved them. I used the recipe from Lemon and Poppy seed Cupcakes http://cupcakeluvs.blogspot.dk/2013/02/citron-birkes-cupcakes-lemon-poppy-seed.html, I omitted the lemon with orange and added almond meal. Yummy
INDGREDIENSER/ INGREIDIENTS
12 stk / 12 cupcakes
175 gr mel / 175 gr flour
50 gr mandel mel /50 gr almond flour
170 gr sukker / 170 gr sugar
1½ tsk bagepulver / 1½ tsp baknig powder
1½ spsk ristet blå birkes / 1 tbsp tosted black poppy seeds
170 gr smør, smeltet og afkølet let / 170 gr butter melted and cooled
3 æg / 3 eggs
100 gr natural youghurt / 100 gr yoghurt
revet skal af 2½ store økologisk appelsiner / zest of 2 ½ large organic oranges
1 spsk appelsin saft / 1 tbsp orange juice
Frosting/ Frosting
lav dobbelt portion, hvis I skal have høje swirls .
Make dobble potion if you want to make high swirls
80 gr blødt smør / 80 gr soft butter
350 gr siet flormelis / 350 gr sifted confectioners sugar
1 tsk orange juice saft / 1 tsp orange juice
1 spsk flødeost / 1 tbsp creme cheese
½ tsk økologsik appelsin revet skal / ½ tsp zest of an oragnic orange
evt lidt gul mad farve / little yellow food colour
APPELSIN - MANDEL - BIRKES CUPCAKE, 12 stks
- Forvarm ovn til 180 grader C.
- Gør en muffin form klar.
- Bland mel, sukker, birkes og bagepulver sammen i en stor skål.
- I en anden skål rør æggene sammen med yoghurt.
- tilsæt ægge blandingen og det smeltet smør sammen med de tørre ingredienser. Bland godt til der ikke er klumper mere. Bland appelsin skal og saft i.
ORANGE - ALMOND - POPPYSEED CUPCAKES, makes 12
- Preheat the oven to 180 degree C .
- Prepare the muffin tin.
- Mix flour, sugar, poppy seeds and baking powder in a big bowl.
- In an other bowl beat the eggs with the yoghurt.
- mix the egg mixture with the dry ingredients and the melted butter. Mix well . Add the orange zest and orange jucie.
- Fill the muffin cases

Bake for 20 - 25 minuts. In my oven it took 20 minuts. Do poke with a tooth pick to see if they are baked. They taste so good and kan be enjoyed also like this without the frosting.
APPELSIN FROSTING:
- Pisk smør luftig, tilsæt flormelis og pisk til alt er godt blandet og luftig
-Tilsæt flødeosten, appelsin saft og skal. Igen pisk med mellem hastighed til alt er godt blandet. Tilsæt få dråber mad farve. Skrue op for hastigheden og pisk til det bliver fluffy.
- Kom frosting på de afkølede cupcakene.
ORANGE FROSTING:
- Beat butter, until light add confectioners sugar and beat again until light and fluffy.
- Add cream cheese, orange juice and zest. Continue wisking on medium speed till all is mixed. Add colour then turn the speed to high and wisk til its all fluffy.
- Decorate the cooled cupcakes with the frosting as you like .
