A delcious vegetable dish. realy yummy as a side dish. You can use all kind of vegetable. This time I had a packet of frozen veggies .
800 gr blandede grønsager, blomkål, gulerødder, broccoli. Jeg brugte frosne grønsags blanding / 800 gr mix vegetable, cauliflower, broccoli, carrots.
300 gr kogte kartofeler / 300 gr boilede potatoes
200 gr ærter / 200 gr green pea
½ tsk hvidøg pure / ½ tsp garlic paste
½ tsk ingefær pure / ½ tsp ginger paste
½ tsk bukkehorns frø / ½ tsp fenugreek seeds
½ tsk tomat pure / ½ tsp tomato paste
½ fennilkel frø, kan undlades / ½ tsp fennel seeds, optional
1 tsk sorte senneps frø / 1 tsp black mustard seeds
1 tsk spidskommen frø / 1 tsp cumin seeds
½ tsk nigella frø / ½ tsp nigellea seeds
2 tsk coriander frø, stødt groft / 2 tsp coriander seeds, crushed coarsly
1 tsk salt / 1 tsp salt
1 tsk rød chili pulver / 1 tsp red chilli powder
½ tsk gurkemeje / ½ tsp turmeric
½ tsk amchoor ( tørrede mango pulver ) / ½ tsp amchoor ( dried mango powder )
2 spsk olie / 2 tbsp oilevt ½ tsk tørrede chilli flager / ½ tsp dried chili flakes
Skær de blandede grønsager og kartofler i mundbidder. Varm olien på en pande. Smid bukkehorns frø, senneps frø og Nigella frø i. Når de begynder at "poppe", kom spids kommen frø og fennikle frø i. Steg dem 1 minut. Tilsæt alle 3 puré i , skrue op for varmen og steg 1-2 minut.
Cut all vegetable in bite size. Keep the potatoes and peas aside. Heat the oil in a pan on medium heat. Trow in the fenugreek seeds, the mustard seeds and Nigella seeds. When they begin to "pop" add fennel seeds and cumin seeds. Fry for 1 minut. Add all the pastes, increase the heat and fry for 1-2 minuts.
Add the vegetable except potatoes and peas. Add salt and chili powder. Fry for 8-10 minuts. Add potaoes and peas. Add the dried chili flakes. Fry for 5 minuts more and sprinkle with amchoor. Take the pan of the heat. serve hot with chapatti or rice or as a side dish to meat.
